Guacamole is made from ripe avocados through processes such as washing, peeling, pitting, beating, mixing, packaging, quick freezing, and sterilization.

Guacamole is a granular mixed sauce, the core ingredient of which is high-quality ripe avocado. It combines a variety of natural ingredients, such as onions, garlic, lemon juice, chili peppers, etc. Different regions will adjust and innovate according to local tastes. The guacamole production line we developed uses advanced processing technology while maintaining the traditional flavor to ensure a delicate taste and rich flavor.

Guacamole Processing Steps:


In order to ensure the quality and safety of our products, we have developed a strict production process. The guacamole production line is carried out in a constant temperature environment of 6°C to minimize the oxidation reaction of avocados during processing and maintain the freshness and nutritional value of guacamole.

  1. Sorting: Manually select ripe, undamaged, and unrotten avocados.
  2. Washing: Use a avocado washing machine to thoroughly wash the peel and remove surface impurities.
  3. Halving and peeling: Manually halve the avocado and remove the pit and peel to ensure that the flesh is intact and hygienic.
  4. Pulping: Finely pulp the flesh to form a uniform paste base, this is a very important part of the guacamole processing plant.
  5. Mixing: Mix the pulped puree with the retained pulp particles and seasonings such as onions and garlic, and add colorants to inhibit browning.
  6. Filling: Fill the mixed guacamole into packaging containers according to specifications.
  7. Quick freezing or HPP treatment: Use quick freezing or high pressure sterilization (HPP) technology to lock in freshness, extend shelf life, and ensure the microbiological safety of the product.

In the production process of guacamole, multiple high-efficiency processing equipment are used to ensure the standardization and efficiency of the entire process:

  • Washing machine: used for cleaning avocados to remove impurities and surface pollution.
  • Pulper: Efficiently crush the pulp to make it smooth and delicate.
  • Screw mixer: equipped with a cold water jacket, stir evenly and control the temperature, effectively delay the oxidation of the guacamole, and maintain the color and taste.
