1. Cleaning
Wash fresh pineapples thoroughly to remove dirt, impurities and pesticide residues on the surface of the peel. Generally, water spray and brush roller combined equipment are used for cleaning. Some factories also add ozone or sodium hypochlorite solution for disinfection.
2. Peeling and core removal
After washing, the pineapple enters the peeling and core removal stage. Mechanical equipment is used to automatically peel off the peel and core, leaving only the pulp that can be squeezed for juice. This step requires precise equipment to reduce pulp loss and ensure processing efficiency.
3. Juicing
The pineapple pulp goes into a pineapple juicer for pressing. Usually a belt press or screw press is used. The goal of this step is to extract the juice as efficiently as possible while retaining the aroma and nutrients of the original fruit.
4. Air removing
The squeezed juice contains a certain amount of air, which will affect the subsequent sterilization effect and shelf life. Therefore, vacuum degassing must be carried out to remove oxygen from the juice, prevent oxidation reaction and reduce the generation of foam.
5. Sterilization
The juice is generally sterilized by instant high temperature sterilization (such as HTST, high temperature short time treatment) to kill harmful microorganisms and extend the shelf life while maximizing the retention of the natural flavor of pineapple juice.
6. Filling
After sterilization, the pineapple juice immediately enters the aseptic filling stage. In a sterile environment, the juice is poured into pre-sterilized containers, which are then sealed, labeled and packaged.
