Step 1: Raw Material Selection and Pre-processing

The first step in making mango juice is selecting high-quality mangoes that are free from diseases, pests, and damage. This directly affects the taste and quality of the mango juice. Therefore, after harvesting, mangoes are usually sorted to remove rotten, diseased, pest-infested, and overripe fruits.

Step 2: Cleaning

Mangoes have dust, pesticides, and other impurities on their surface. Therefore, they undergo rigorous cleaning before entering the processing area to ensure food safety.

Step 3: Peeling

Mango peel has a tough texture and a resinous taste, so it needs to be thoroughly peeled to prevent the peel from affecting the flavor and color of the juice.

Step 4: Pitting and Pulping

Pulping is a crucial process for obtaining mango pulp. The mangoes are crushed, pressed, and filtered to form a uniform and smooth pulp, and the process also removes the mango pits.

Step 5: Homogenization and Blending

Pure mango pulp is quite viscous. To improve the texture, some manufacturers use homogenization equipment to make the pulp particles finer and the texture smoother. When subsequently processing it into juice, minor adjustments to acidity or sweetness can also be made at this stage.

Step 6: Sterilization

The fruit pulp may contain microorganisms, so it needs to undergo high-temperature short-time (HTST) sterilization or pasteurization to achieve a sterile state.

Step 7: Filling and Storage

Pure mango juice can be packaged in aseptic bags, glass bottles, or PET bottles.

Step 8: Further processing of different finished products:

After obtaining pure mango juice, a variety of product lines can be produced:

100% pure mango juice: no added sugar or water

Mango mixed fruit juice: blended with orange juice, apple juice, pineapple juice, etc.

Mango juice beverage: lower fruit juice content, with added sugar, water, etc.

Depending on the specific product, the blending, dilution, filtration, homogenization, and filling steps in the production process will vary, and the mango juice processing equipment used will also differ.
